How to Make Microwave Eggs in a Jar for a quick, easy breakfast.
What a weekend! If you follow me on social media you can see some of my dear friend Jenny’s wedding, which was pure magic. Leslie Durso and I even found time to make a video while we are gone! I’ll be sharing more in a future post, but in the meantime, this quickie on-the-go breakfast is perfect for a Monday – microwave eggs in a jar.
I basically crack an egg (or in this case, just the egg whites) into a mason jar, add salt/pepper and shake it well. Then I fill the remaining space with spinach.
Ding Donged (my mom’s word for “microwave,” for any confused readers) for 60-90 seconds and eaten with a heaping spoonful of salsa.
It’s healthy and filling from all the egg protein. You can also add meat to eat if you’re not vegetarian – sausage, ham, or deli meat are some great options. My favorite part is that I can eat it in the car and not have to use a plastic container. Also you don’t have to mess up a bunch of bowls – it’s just one jar to clean.
Also, anything you make in a mason jar tastes better. That’s a fact.
