Using puff pastry for the first time.
Hey. How is everyone doing? If your Facebook feed looks anything like mine, you need a break. You need a distraction. You need a Bacon Cheese Tart made out of puff pastry.
This is actually my first time using puff pastry. Of course, over the years I have heard many things about its magic. You can use it to make everything from pies to croissants, homemade pop tarts and a free form tart, like this one.
It is fairly simple to do – just thaw the frozen sheet out overnight in the refrigerator. This is from Trader Joe’s – found in the freezer section. There are two in the box. I use one to make cheese puffs (recipe coming soon). And with the other, I just roll it out, pierce the middle section with a fork, and fill it with cooked bacon, a mayo/curry mixture, and parmesan cheese.
Brush the un-docked crust with an egg wash (one beaten whole egg plus two tablespoons of water). Bake the whole thing at 400 degrees until golden brown, about 30 minutes. This recipe is not perfect – the bacon comes out way too overdone. I would probably not cook it so brown on the stovetop next time. But I don’t want to put it on the tart raw, for fear it will get too greasy.
I’ll keep working on it. But in the meantime, I just felt like I wanted to share this with you, in its imperfect form. Kind of how I’m feeling right now, burnt to a crisp but still salvageable. Today I am going to a protest march in Los Angeles, plus a private support group to process our feelings. Please stay safe and support one another.
