I had a kooky little idea of what to do with the leftovers from Button Mash – make Rice Paper Noodles!
Rolling a whole bunch of spring rolls was not something I could be bothered with after a long day, so I took the rice paper, and cut them into strips with some kitchen shears.
Soaked in hot water, drained, eaten with the leftover jicama, french beans, fried tofu, egg, pickled veggies, and hoisin/peanut sauce. They clump up, so add a little sesame oil to loosen.
