Pancake Cake: Buckwheat Pancakes with Greek Yogurt

A last-minute Pancake Cake – Buckwheat Pancakes with Greek Yogurt.

So what happens when it’s 5pm, you find out it’s National Chocolate Cake Day, but there’s no cake in the house and you really really really want cake?  You make a Pancake Cake using Buckwheat Pancakes and Greek Yogurt.

…then “frost” the top with Greek Yogurt and maple syrup…

….and stack them on top of one another?  Ta-da!  Pancake Cake!  Next time I will try adding some sprinkles and create something Funfetti style.

Pancake Cake

It’s a lot of pancakes for one person but perfect to divvy up and share with others, just like a cake!  This is Bob’s Red Mill Buckwheat Pancake Mix which is super nutty and gluten-free.  It TASTES healthy, which you either like or you don’t.  Lucky for me, I am the former.  Abe is the latter.  Psssst – you can also use it in the waffle iron.

Tip – don’t frost more than you can eat.  The pancakes hold up well in the fridge as leftovers, but not if they are soaking up all the yogurt!  You can also serve it without the “icing.”  But what is the fun in that?!?

Pancake Cake

Ingredients

  • For the pancakes
  • 1 cup Buckwheat Pancake Mix
  • 3/4 cup Whole Milk
  • Zest/Juice of 1/2 Lemon
  • 1 egg
  • 1 Tablespoon Vegetable Oil
  • Butter
  • For the Frosting
  • 1/2 Cup Greek Yogurt
  • Zest/Juice of 1/2 Lemon
  • Maple Syrup to Taste

Instructions

  1. Mix together the frosting ingredients. Set aside.
  2. Combine the pancake ingredients. It will be pretty thick, add more milk if you like a thinner pancake.
  3. Melt some butter and make one large pancake - this will be the base. Continue with 5 more mini pancakes.
  4. Stack them on top of one another, frosting between the layers.
  5. Add more maple syrup if desired and eat hot.
