Inspired by my Oatmeal du Jour series, I present: Avocado Toast du Jour. Because there are about a million ways to make this delicious dish that I could seriously eat every single day.
This version finds me mashing half an avocado with leftover salsa, a tablespoon of Sriracha, and a squirt of Just Mayo. Spread that on top of the bread…
…then top it with mixed greens and shredded mozzarella. This is toasted Dave’s Killer Bread.
I could’ve broiled the top to melt the cheese, but I didn’t want to overcrisp the bread. It was still good.
