Did you know that Jiffy now makes a vegetarian (non-lard) version of their corn muffin mix? I decide to use it to make crockpot Corn Dog Bread in the slow cooker. Yes, as in hot dogs!
The idea came about when I wanted to make my hot dog muffins, but it was too hot to turn the oven on. I know from experience that things can get sticky baking in the crockpot, so I made things easy to remove by lining the bottom with parchment paper. Trace the paper so you know how much of it to cut out. Then, put that piece at the bottom of the crockpot…

Mix the batter (I use Egg Whites and Unsweetened Cashew Milk), add 3 cut up Veggie Dogs…
…slow cook on high for 1.5 hours, until a toothpick comes out clean.
Serve the cornbread with ketchup for dipping! Unbeknownst to me, I actually concoct this on Thursday, which is also National Hot Dog Day.
This is the perfect cornbread to serve with some chili. It is also great to be able to have the flavors of the fair at home without having to break out a deep fryer!
