Matzo Brei was introduced to me about 16 years ago, after my first Passover with Abe. The combination of soft matzo (soaked in water)…

…eggs (or in this case, liquid egg whites)…

…and scrambled up (in coconut oil)…

…produced surprisingly delicious results! My favorite part about them is you can eat them sweet, savory…

…or – as was the case Sexto de Mayo – topped with refried beans, salsa, and jalapeños.

What a unique combination! I’ve never heard of it but it looks delicious.
