Cardboard Muffins

You know how Grape Nuts can taste like moving boxes? Unless you microwave them with milk, and then they are seriously heaven.

Well, this stuff – even with a nuking – still tastes pretty stiff. So I decided to make them into muffins.

Soak a cup in a cup of Almond Milk for 5 minutes. Then add 1/2 cup applesauce.

FYI – these little packets = 1/4 cup each. So, 2 of those. You’re welcome.

The remaining ingredients are 3 TB egg whites, 1/4 cup brown sugar, 1 TB oil, 1 teaspoon vanilla, 1 TB baking powder, pinch salt, 1 3/4 cups AP flour. Using an ice cream scoop, divide the batter into 15 muffin cups.

400 degrees and 15-20 minutes later…

…soft, moist muffins. But SUPER STICKY. Either spray the paper first, or don’t use liners.

They’re not too sweet – you could probably double up on sugar. I just smeared mine in Kaya Jam.
