Picked up a bag of Korean Sweet Potatoes from California Market the other week – perfect for Christmas, because of their mild Chestnut flavor.

These guys dry out easily, so instead of microwaving them like I do with the Trader Joe’s variety, I cook them using my Mom’s method. Then, they’ve gone into everything from sandwiches + salads (<—this one had hummus, balsamic glaze, and sun dried tomatoes)…

…to straight up with Roasted Cranberry Sauce, Burrata Cheese…

Are they not the best sweet potatoes ever???!!! Love them!
