Peanut Butter one almost empty…

…I filled it with 1/2 a cup of nonfat cottage cheese sweetened with Liquid Stevia

…and a chopped sweet potato.

Back home for lunch, the vegetable du jour was incorporated into a salad – basically the same one as last night’s post-Disneyland dinner, but smaller, since there’s no Baby Spinach left.

And an extra drizzle of balsamic glaze doesn’t hurt.

Is that balsamic glaze from TJ’s? I just picked up a bottle last month and am obsessed with it. I’ve been putting it on everything. Favorite quick snack lately is toasted bread with cheese, garlic, and balsamic glaze. Mmmm..

I haven’t had that combination of sweet potatoes, nut butter and cottage cheese in ages – I always forget how good it is!
