Abe was working late at Huffington Post Live because of Obama’s State of the Union Address. I got some melon/miso/reading in…

…then decided do some lazy baking before he got home. Remember my “Don’t Call It a Dump Cake”/”Easy as Pie Cake”???

This one is even easier, and for those of you who are trying to limit calories/fat/etc. it may fit your dietary needs. I know you can make dump cakes out of canned fruit instead of pie filling, and with soda instead of butter. It appears nobody has done both yet (at least, not on the internet).

Pour a 20 oz can of crushed pineapple (juice and all) into an ungreased pie dish. Add 9 oz of Devil’s Food Cake Mix on top.

Pour 1/2 a cup of soda on top – any clear flavor (I used Sprite Zero).

Don’t stir! Just let it bubble away in a 350-degree oven for one hour.

It looked kinda scary…

…so I threw some sweetened coconut flakes to hide the weirdness.

Then, an incision was made, with bated breath.

A very disappointing, unattractive, and liquid-y result…

…that tasted shockingly INCREDIBLE. I wound up eating another bowl.

Wanting to try this with a less-processed cake mix and seltzer…

…any of my fellow Americans up to the task?!?

Haha, I love ugly food sometimes more than the pretty stuff! Never judge a book by it’s cover, right?! I’m gonna have to see if this will work gluten free!
Yes please do and report back!!!
Love your cake experiments! I’ve totally done this with canned cherry pie filling and yellow cake mix… also strawberry cake mix. Super addicting.
Oh my goodness that might be the most interesting cake recipe I have ever seen! I am definitely going to try it with seltzer and some “healthier” cake mix!
Please let me know how it turns out!!!
Haha – this is generally how all my new baking experiments turn out on the first try!
There are some good ideas in this recipe (love the crushed pineapple!) and I bet it did at least taste very delicious!
How do you like the book so far??
Looooove
