Yay Girls!!!! I have several groups I get together with on a regular basis, but with the Holidays + Punk Rock Travel it’s been a while. Yesterday, even Ruby (The Baby Mentalist) got in on the action.

Happy to report I’ve been feeling less blue lately – carving out quality time with friends has definitely helped. Also, planning my 10-year-anniversary trip – Abe and I have decided to postpone Hawaii for another time (I really cannot voluntarily get on another long plane ride) and are road tripping to Santa Fe instead. Food suggestions, please!!!

Is there any way you guys can share that slow cooker roast recipe? It looks delish and I am always on the lookout for yummy slow cooker recipes.

Glad you are feeling a little more uplifted. I think it’s important to let your soul have a chance to process everything and decompress from it all. You hadn’t really had that much of a chance to in the last year.

thanks cg! here’s the recipe for the pot roast!
One can of Campbell’s cream of mushroom soup
One pouch of Lipton Onion Soup mix
1/2 cup of water
3lbs pot roast or chuck roast
Mix it together, slather it on the meat. Add small dutch potatoes and carrots. Slow cook on low for 7-8 hrs. You can do high for 3-4 hrs but with meat, it’s always better to do longer and lower.

Hi Lynn and Abe! I can’t figure out how I got to Lynn’s blog but I just started reading.

If you go to Santa Fe, consider traveling north to Espanola. There are some nice restaurants there. If you want some yummy-uncompilcated tacos, go to El Parasol; it’s right off the low road to Taos, rte285, if you are going *that* far north! Just turn right on 76 when you get into Espana and it’s there on the left: a roadside taco stand next to its big, awesome older sister: El Paragua– another fine restaurant where you can get a more varied local menu.

If you keep going up 76, please do wave and blow a kiss for me to my old apartment, back down a gravel road next to El Paragua, (behind the goat pen), then also to Holy Cross Church and School where I worked for 3 years. And if you want more restaurant recommendations, from Santa Fe to Taos, let me know and I will do a survey of my family members who live there and are food lovers themselves!!

Oooohh, Santa Fe is probably the only place I’ve not been to in New Mexico. It’s pretty easy to drive around in New Mexico so don’t be daunted by distances if there is a place you want to see. Make sure to be outside facing west at sunset every day. It will deliver.

Ooh! I grew up in NM, and I have to say that you pretty much can’t go wrong eating anywhere in Santa Fe–a lot of restaurants serve new mexican food, but with a twist, so I think you and Abe will be pleasantly surprised at the number of veggie options there are. I haven’t been back in over 8 years, so I am sure others would have more up-to-date recs for you, but if not, I will do my best to remember names–I know there are quite a few right around the plaza.
I see that another reader recommended a drive north–if you do so, I would say that a stop at Rancho de Chimayo is also a good idea.
I am very jealous of all the amazing chile you’ll get to eat :)
