The pantry experiments continue…

…I’ve seen variations on this “recipe” all over Pinterest – basically take a can of pumpkin + a box of cake mix, ignore the “add oil + egg” part, and bake.

I decided to do a “muffin” version – added a palmful of Pumpkin Pie Spice + 1 cup Chai Tea. Batter setting on the Blendtec needed a few scrapings (<—just emailed the Giveaway Winner – check your inboxes!)

Ice cream scoops with levers make muffin-making a cinch!

Lined 6 of them, since they were being topped with Ghiradelli bars and I didn’t want them the chocolate to ooze.

The batter is really thick – there’s enough for a dozen, plus a shallow cake.


350 degrees for about 25 minutes…

…cooled for about 10 minutes before unmolding.

(I ate a piece of Sauerkraut Pie while waiting.)


As you can see, these are (slightly) prettier than the ones with paper liners…


…they are really gooey/moist – quite sensitive!

Bringing the cake (along with the Breakaway Bakery bars) to share with the girls tonight…

…packaging the others for friends…

…which leaves one left to taste test…


…a Pumpkin Explosion! The texture is kinda like eating a marshmallow because it’s so soft in the middle. Am curious if anyone has made these without the water (the “cookie” recipe)?

i have done the cake mix + canned pumpkin before to make cookies. they ended up more dense and “cake” like but still delicious! of course, adding in some chocolate always helps too…
I make a variations of this for my kids, in cookie form. One spice cake mix, one can pumpkin purée. Mix, drop by spoonfuls onto cookie sheet (it’s really wet and sticky). Bake at 350 until they look done. They LOVE them.
By one “can” how many ounces are we talking? The only ones offered over here (I live in S. Korea) are over 30oz, so can you provide an ounce estimate? I have a spice cake box saved from a shipment my mom sent over and they sound delish! Thank you!!
15.25 oz of Cake Mix, .15 oz of Pure Pumpkin (not the Pumpkin Pie Filling Kind). GOOD LUCK!!!
this looked so easy and less mess as well. the ones with the chocolate bars looks delicious.
i watched my mom bake cakes, cookies, etc from scratch since i was a kid. it always looked so tedious. she has an irrational dislike for using the blender and food processor… tasting the finished product was a breeze though.=)
I love recipes that include cake mix! pumpkin sounds like the perfect addition!
