When we were cleaning up after the brunch on New Year’s, I just shoved leftovers into casserole dishes, then the freezer…

…this morning I defrosted one – weighing it down for about an hour to drain out excess liquid. Once it was thawed, I could see what the layers were – roasted red peppers, crostini, shredded mozzarella cheese, and eggplant. (I think.)

Something to hold it all together – 3 Eggs, 1.5 TB German Mustard, 1/2 teaspoon salt and pepper…

…plus two cups of whole milk.

Poured into an 8×8 Pyrex. It’s now covered and sitting in the fridge for about 8 hours, until I’m ready to bake it tonight…

…in the meantime, I ate its neighbor…


…and another fridge friend – the last of my birthday Bûche de Noël!

Frosting at 2pm makes me so happy.
