Tis a Gift to Be Simple

We had dinner plans with Christy and Jeff last night. Since they have a 3-month-old, things had to be super easy.

1 box cake mix + 1 container Yogurt + 1 cup water

Bake according to package directions (ignoring the “add oil and eggs” part)

Dave and Mye were my guinea pigs. They agreed a light glaze would be good.

I made one from the juice of a lime + 4 TB Powdered Sugar + 1 TB Almond Milk.

Along with the M Chopped (such a good salad) I also polished off Abe’s Kale.

The cupcakes were great! Very moist – you can’t taste the yogurt at all, either.

The M Chopped is my favorite, I can’t ever order anything else! (except for a side of kale…)

I used to make yogurt cake all the time! I love it:) Thanks for reminding me. For the frosting, I think I used to use yogurt and fat-free cool whip maybe??
