…back home a quick salad was thrown together – toss n chopped baby spinach…
…TJ’s Coconut Chips…
…shredded roasted chicken, trail mix…
…and hummus thinned out with water as dressing.
Random, but hit the spot – just like my dessert plate of candy corn, frozen peaches, and a 3-Ingredient Cookie/Lemon Poppy Seed muffin.
Can’t believe it’s Monday already…this melon is triple the size of that other one!

I wish I had picked up some coconut chips at TJ’s last weekend…they sound like the perfect addition to just about any salad!
