One way to stay sane in show business is to make a schedule for yourself every single day, whether it be a meeting, errands, doctor’s appointments, a date with a friend (or yourself), a trip to the library/cafe to get work done – just something that keeps you from sitting around the house, waiting for the phone to ring.

But the secret is not to OVER-book yourself – auditions/shoots come up last minute and you don’t want to be scrambling around, canceling/apologizing/rearranging your agenda when you need that precious time!

I purposefully cleared two full days after Disney World, knowing it usually takes me a little while to readjust after a vacation. Turns out I only needed one, though, and this morning I woke up with something very rare: nothing on my calendar.

So I decided to spend the morning doing a baking experiment. Fueled up with grapes…

…a steaming cup of green tea…

…and I came up with…this…thing…

It’s basically beer bread, which I’ve made two times before, but this time I used Banana Bread Beer

…and Pure Stevia as the sweetener…

…making this – sugar-free? Actually, I have no idea what the beer has in it since they don’t list their ingredients.

So, um…I present to you…

(Almost) Sugar-free Banana Bread Beer Banana Bread

  • 3 cups all purpose flour
  • 1.5 tsp salt
  • 4.5 tsp baking powder
  • 1/8 tsp Pure Stevia Extract
  • 1/2 tsp vanilla
  • 1.5 cups Banana Bread Beer

Preheat oven to 375. Combine all the ingredients, mix into a dough, and pour into a greased loaf pan. Bake for 45 minutes or until a knife comes out clean.

The verdict?

It’s very dense and pretty sweet, making for a nice breakfast or dessert bread. You can definitely taste the banana and the beer. And the slight aftertaste that comes with Stevia, but a lot of that is masked by the alcohol – which almost comes off butter-y???

Wound up eating two pieces, but not sure if others (namely, Abe) would dig this. Actually just made plans to see Christy in an hour and would love her opinion, but don’t know if pregnant women can have beer bread? Especially ones sweetened with stevia.

Pressed, sliced, soaked in Korean BBQ Sauce for 1-2 hours…
