Julius and I were a little confused this morning…
…aren’t these usually signs that X-mas is OVER?!?
Nope – things were still very much in Holiday prep mode back at home. I even threw together two last-minute gifts!
A trail mix of all my favorites -
- Dried Cranberries
- Banana Chips
- Cinnamon Sugar Almonds
- Dried Pineapple
- Sunflower Seeds
- Pumpkin Seeds
- Dried Apricots
- Yogurt Raisins
Mocha Granola -
- 2.5 cups rolled oats
- 4 packets Sugar in the Raw
- 1 packet Starbucks VIA
- Pinch Salt
- 2 TB Melted Coconut Oil
- 4 TB Honey
- 1 Lindt Dark Chocolate Roasted Almond bar
Preheat the oven to 300 degrees. Stir all the ingredients (except for the chocolate) in a mixing bowl. Put it onto a greased baking sheet for 30-40 minutes, stirring every 10 minutes. When it’s golden brown and toasted, cool completely, then add the chocolate bar – broken into pieces.

Filled the jar with Nonfat Chobani, packet NuStevia, and a sprinkle of each homemade gift…
…quality control, of course
Speaking of presents, I got a lovely one from my intern Caitlin!
Those PB Chimes went straight into my suitcase…
…pretty much packed…
…just polished off the last of the fresh produce…
….and….X-mas vacation starts NOW.
