Lovely Day

Lovely brunch!

I wasn’t hungry when I woke up, so I put together a sally that could sit for a while, til I was good n ready for it. First, I made some basil paste, which is essentially pesto without the cheese/nuts

Big handful of fresh basil with 4 TB Malibu Olive Oil – pureed in the mini prep processor

Froze most of the paste, but reserved 1 TB for a dressing, along with the zest/juice of a huge lemon + salt and pepper

Dinosaur Kale, toss and chopped

Massaged that basil lemon dressing in there – my hands got drrrrty

Added two tomatoes; sat covered in the fridge

Portioned out a bowl around noon, topped with crumbled Cranberry Brown Rice Pops

A drizzle of honey for extra sweetness

Afternoon snack – Scarlet Sally!

Red grapes, red plum, red strawberries

The plum was so ripe it slipped right outa its skin!

both are winners. i’m a sucker for kale- i think ive had it almost every night last week and this week so far. Dino kale is the best- i mean who can beat prehistoric veggies hehe
