Lynn – The Gift of Granola

breakfast - product review - vegetarian

This morning I had an audition, so after journaling and walking Julius for 45-minutes, I chomped on an Amazing Grass Green SuperFood Energy Bar in Berry flavor while putting on makeup and curling my hair.

I like the texture – like a Larabar, but not as sweet. The ingredients are stellar – I liked that I could just eat a bar chock full of greens – perfect for an on-the-go meal. Enter our Amazing Grass giveaway and see what you think for yourself! It held me over for around 3 hours, enough to fuel my audition and keep me satisfied til lunch….

I picked up Christy and we drove over to Santa Monica for a special treat. More on that later on!

When we got back from our lunch I had a phone appointment with my shrinky dink, then I baked…y’all know I don’t really bake from scratch so I did my best. Two of my friends have birthdays, so I decided to make them some granola as presents.

Lynn’s First Attempt at Granola (makes 2 lovely gifts plus leftovers)

Preheat the oven to 350-degrees. In a large bowl, combine:

  • 6 cups of rolled oats
  • 1 cup raw almond slices
  • 2/3 cup coconut oil
  • 1/3 cup agave
  • 1/3 cup maple syrup
  • 2 TB brown sugar

The coconut oil kinda solidified as I was stirring it. Can ya see that? It smelled heavenly.

Spread onto two baking sheets, covered in cooking spray and foil.

Bake for 20 minutes, stirring every 5 minutes.

One pan burned. I guess the layer was too thin.

But luckily the other one turned out lovely:

I tossed the latter with a cup of raisins and put them into 2 containers for my birthday buddies.

I saved the burnt stuff for me and Abe…we’ll see how long it lasts.

Before taking another 45-minute walk, I chomped on some organic fresh grapes and a fake wild grape tootsie pop.

Now I’m off for dinner with one of the birthday girls! What homemade gifts do you make?
